This year we have a variety of potatoes growing in the garden including French fingerlings, Russett Burbank, Yukon Gold, and Red Lasota.  Each of these potatoes offers it's own unique cooking possibilities.  The Russett makes for a great baker and masher.  The Red Lasota is wonderful as a boiled baby potatoe.  The Yukon Gold is multi purposed as a boiler, roaster, and sometimes masher.   The French Fingerling is an outstanding roasted potatoe.

Oregano Potatoes            

2 medium potatoes, peeled and cubed

2 tablespoons lemon juice

5 1/2 teaspoons olive oil or vegetable oil

1 garlic clove, minced

1 1/2 teaspoons minced fresh oregano

1/2-teaspoon salt

1/8-teaspoon pepper

In a bowl, combine all of the ingredients. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 425 degrees F for 45-50 minutes or until tender, stirring twice.
